Columbus Weekend

My inlaws got us a new grill! We picked it up at Lowes and that night put it to use. This was my dinner. I didn't eat the extra bun. I had white corn with a portobello mushroom (with avocado, veganaise, tomato, spinach, mustard and soy mozzarella cheese on a Rudi's Organic bun)...SO GOOD!

 Vegan pancakes! Definitely my go to recipe now. You can mix it up, using different flours but I used all purpose here and added banana. It is topped with Earth Balance butter, fruit and agave nectar. These pancakes were easy to  make and are super fluffy! I sometimes have troubles making pancakes but these turned out perfectly.

Finally made banana "ice cream". It was SO easy. It took a while in my blender but eventually got there! I did the pb chocolate one. It was delicious but overdosed a bit on chocolate this weekend haha Will definitely be making banana ice cream again though.

This was a quick and easy dinner. I made the breadsticks using leftover dough from the calzones (below). They are SO good. I just sprinkled them with some garlic salt but they have plenty of flavour on their own. The noodles have some pesto basil spread (from Trader Joes) and leftover noocho. It was yummy!  I know, a little low in veggies.

Here are the calzones. I did two large and two smaller. The two for me were vegan and I used homemade pizza sauce, soy cheddar cheese, spinach, onion, olives, mushrooms and soy mozzarella cheese. I'm loving this recipe. I'll have to try making regular pizzas too!

 

 This chickpea taco was really tasty! I really enjoyed the chickpeas. Next time though, I will use a corn shell as suggested. This one kinda fell apart as I ate it, haha.

Holiday nail polish shows up so early in stores. I know to snatch them up quick though because they often sell out fast and aren't brought back. Case in point, the WnW On the Prowl collection. This is the Snowman collection..that's all they're called. There are plenty more colours but I just wanted these glitters. I love a glitter in a clear base.  Swatches to come!
