Wanna see what I ate on Wednesday?
I like when food bloggers post everything they ate in a day...well, healthy food blogs, of course! I think it's particularly interesting with vegans since people seem to think they have such a limited diet. I haven't felt very limited at all, besides at a few restaurants I've been to. There are so many options! This was just a normal (as of the past few weeks) day, eating-wise, for me. Don't think I made my choices based on what I wanted to post here, I didn't. haha
1st meal 7:30am
coffee w/ So Delicious Coconut French Vanilla Creamer
I don't usually have coffee during the week but I was craving it. I have switched to decaf; this is a Seattle's Best one (because I had a coupon for it)
2nd meal 10am
fresh made juice. I did 1 orange, 1 beet and 4 mini apples in my juicer. Then I poured it in a blender and added ground flaxseed, some ice and a banana! It was delicious. I shared it with my husband.
3rd meal 12pm
leftover corn soup & a cucumber sandwich (2 slices whole wheat bread, veganaise, cucumber slices, mustard + soy mozzarella cheese). Yummm. My grandma used to make us cucumber sandwiches so I have such a soft spot for them. The soup is delicious!! I was happy to have leftovers from last night. I also froze some.

4th meal 3pm
some assorted nuts. I put raw almonds, cherry Craisins, soynuts and walnuts in a tin to make an easy trail mix. I ate a small palm full before I went to the gym and then again after the gym. Yay energy!
5th meal 5:30pm
eggplant parm! spaghetti noodles, homemade marinara (this recipe) and breaded eggplant. I used this recipe for the meal. Delicious!!
The cheese sauce is SO GOOD. I will definitely make it again! I also have lots of leftover breaded eggplant (husband refuses to eat eggplant) so I will find ways to use those up for lunches (eggplant burger sounds delish). Oh, I didn't quite finish my noodles/sauce but I did eat all the eggplant. I was full and have learned not to over eat.
6th meal 8pm
homemade chai pudding. My first time making this! SO tasty! And easy. I used this recipe. I did 1 cup of coconut milk (the watery carton kind not the thick canned kind), 2 tbsp chia seeds, few dashes of cinnamon and a drizzle of agave nectar. I mixed it all together and let it sit in the fridge for 3 hours. When I served it, I added some raspberries.
The chia seeds soak up a ton of the milk, it's crazy. The result is hard to explain, honestly. The chia seeds are no longer crunchy (soak it for less time and they will still have some crunch) but they aren't gummy like tapioca either...well, they are smaller in size so maybe it's just less noticeable. I don't know but you should buy chia seeds. A package gives you a ton! I like adding them to juice and cereal but now I'm definitely going to make the pudding more often.
A yummy day! I got my protein from soy milk, nutritional yeast, soy cheese, spinach, nuts and tofu. I got my calcium from soy milk, tahini, tofu and orange juice. I had 6 servings of vegetables and 3 servings of fruit, approximately. :)










Wow. Thank you so much for this post. It's been interesting to see what you, as a vegan would eat. In the past I thought that being a vegan would mean that your diet is quite restrictive. I can see now that there is an array of things tantalising things you can cook up. That scramble looks interesting... *writes tofu on this weekend's shopping list*
