Vegan Breakfasts

I love Friday Foodie posts, do you? I'm going to keep them up even after Vegan Mofo ends (end of the month)!

I thought I'd talk about some vegan breakfast options this morning. I am a big proponent of breakfast... as everyone should be! Such an important meal and it can really determine how the rest of your day will go.  During the week, it's just me at home in the morning because my husband leaves super early (or right now he's gone Mon-Fri and only home on weekends...that'll last until Dec 22) but on weekends my husband is home so I cook something up for the two of us. Weekends in generally when I'll do pancakes, french toast etc.

During the week I like a quick to make but filling to eat breakfast, something to get me fueled to start my day.  I  stopped drinking coffee week day mornings (and switched to decaf. Decaf coffee in the US just means it has less than 2.5% caffeine fyi!) but sometimes I will have tea now that the weather is cooler. So here are some favourite vegan week day breakfasts of mine...

  • muesli or homemade granola -  well, you can make both yourself. I don't do cereal too often because I don't find it filling enough but I make exceptions for these two. I'm loving making my own granola! Easy and it saves me money. I have mine with soy or almond milk, generally. This crisp apple pie oatmeal sounds amazing!  I'll post my own granola recipe eventually but in the mean time try this or this.
  • oatmeal or quinoa porridge - I love these because I can flavour them myself and add whatever mix ins I want so they are very customizable.  They are filling and nutritious too.  I'm really on more of a quinoa porridge quick but old fashioned oats are a great stand by.  My favourite mix ins include banana, mixed berries, cinnamon, agave nectar or maple syrup, pumpkin....
  • tofu scramble - Really does taste quite a lot like an egg scramble, looks like it too! I like to add stuff, of course!  Yesterday I added chopped up portobello mushrooms, onion and spinach.
  • breakfast burrito - When I make a tofu scramble, I make extra so that I can have a burrito the next day. I had one this morning! I just added some faux bacon bits and homemade hashbrowns (just chopped up potatoes w/ garlic salt, pepper and chili powder cooked in a frying pan) in a sundried tomato tortilla. Delicious!
  • parfait - Just add layers of non-dairy yogurt, fruit and granola or muesli! Easy. 
Weekend breakfasts are more of my time to indulge! It's a treat to get to eat this  meal with my husband so I generally put more time and effort into it.
  • pancakes - I have loved them since I was a teeny tiny kid. My favourite recipes are this one and the one from Peas and Thank You cookbook.  I like them better than any non-vegan one I ever tried!  Right now I'm loving chopped up apple in my pancakes but blueberries and bananas are delicious too (just add them to the batter at the end). You can also freeze extra pancakes and then just reheat them in the toaster/microwave for a quick breakfast.
  • crepes - I freakin' love crepes. I loved them as a kid too (weekend breakfasts were a big thing growing up which is why I make them that way too I suppose!). I like filling mine with a non-dairy yogurt, fruit and nuts. They're also great filled with banana and PB, tofu scramble, fruit and coconut etc. So many options.
  • french toast - another stand by in our home. My husband was always better at making this than me but he hasn't tried making a vegan one yet. I made us the one from Peas and Thank You and it's amazing! Better than the non-vegan version for sure.
  • baked goods - this isn't something we have normally have for breakfast but it's pretty delicious when we do :P  Cinnamon rolls, banana bread, muffins etc are all easily vegan-ized. 
  • waffles - I love how light waffles are. I always requested these over pancakes growing up (unless my uncle was making pancakes because his were amazing). Unfortunately, my waffle maker sucks so I've stopped using it. 
  • coffee - I have food with this too, of course. My favourite coffee drink right now is this soy pumpkin spiced latte but it worked best when I used a frother and my frother just broke so I need to get a new one asap! You can also make it with instant coffee, I have and it was still really delicious.  I love black coffee but sometimes I'll mix it up with some coconut creamer, hazelnut syrup etc. Honestly, I drink it black most often. Like I said, my husband and I recently switched to decaf because caffeine is so addictive. It's not bad for you in the right amount (actually there are a lot of benefits). I've been drinking black tea some mornings which has caffeine. We aren't pop drinkers so we don't take in a lot of caffeine generally. Oh and eventually I will get around to trying coconut whipped cream!

As you can see, there are plenty of vegan breakfast options. You can really vegan-ize most breakfast things and not even tell a difference (unless it tastes better, which I find it often does!).

  1. Aww thank you so much Sophie!! You are so sweet! I love all of your vegan breakfast suggestions, I'm also a big fan of breakfast, it is my favorite meal of the day! Lately I've been obsessed with mashed avocado on toast with a little sea salt and ground pepper. It is AMAZING! My toast is always gluten free but you can use whatever you like :)
