Grains, Grains, Grains

Like the song, Bills Bills Bills. Duh.

Minestrone soup from Forks Over Knives cookbook  but I used chickpeas instead of white beans. Delish!

1 minute coffee cake in a mug for my husband and I! These taste like cinnamon rolls. omg.

Fresh juice smoothie. I juiced orange, grapefruit and carrots then blended that with a banana and ice.

Quinoa salad. Pretty simple, just cooked quinoa with whatever veggies you have on hand and dressing! I went with a Goddess/tahini one.

Pizza! Homemade with Boca "beef", faux bacon bits, spinach, olives, homemade tomato sauce and sundried tomatoes.

Yummy burrito. I bake the chickpeas with a bit of taco seasoning.

These pancakes. They were very hearty, not fluffy like a pancake, but tasted great. My husband said they were kinda like eating oatmeal.

Quinoa, edamame, corn salad like this one.

I made some cereal! I was inspired by this recipe but mine is pretty different and includes carob powder so it tastes chocolatey! Definitely liking quinoa cereal so I will have to try some more recipes.

Here's the cereal mixed in with some oatmeal. Looks gross, tastes great. haha

Simple spinach salad.

Homemade granolas with almond milk and  blueberries

Muffins. Didn't turn out as I'd hoped.

I've been making lots of chlorophyll smoothies lately. Yummy.

Orange stir fry with some spring rolls.

Pasta with tomato sauce and Boca "beef", corn and a homemade roll.
