This Friday Foodie post is a bit all over the place but I have a few more Vegan Mofo posts lined up for the weekend before it's over! Soo happy I did it... and I'm vegan now! I didn't know if I'd ever go fully vegan but after just a week or so of cutting back on animal products I knew I wanted to go all the way and stick to it. More on that later!
Here are a few things I ate this week that were DELICIOUS.
Tofu scramble but I used the super extra firm tofu from Trader Joes... amazing! I love that tofu now. I made nuggets (from Peas and Thank You cookbook) with a friend using half the block and then made this with the rest. I also used soy chorizo (also from TJ) for the first time...yum! Other ingredients are spinach, tumeric, salt, pepper, garlic, onion and cumin. There was no need to press the tofu so it's nice and fast. The bread is Rudi's Organic sourdough.
These I made up on a whim. I had phyllo pastry and was craving something kind of meditterannean. So, I made up a mixture of spinach, chickpeas and lemon then spread it on the pastry. I rolled it, cut slices and baked it. The closest one has some homemade garlic hummus on it. It was tasty!
I didn't love these at first but they very quickly grew on me...um and I ate them all in a week. My sweet tooth has been awful lately! They are these bars...only I think I didn't squish mine enough so they weren't at neat. I kept them in the freezer; they tasted best frozen! I like frozen things though.

The eye primer I want! She has a video on youtube and it looks amazing. I don't see it on her shop site right now though...I hope it comes back!!
I stopped buying protein powder after my husband learned a lot about it from a nutritionist...but it was more about the common (coughGNCcough) ones and how they really aren't doing much for you. I do like the look of this one though. I'd use it in recipes.
This is a knock of naked palette...but vegan! You can find it here. Not that I don't already own a lot of similar shades... I'm obsessed with neutral/brown/gold/black eyeshadow, I guess.
I'll admit, I never used cookbooks a lot (I use online recipes mostly from blogs) but I love Peas and Thank You cook book so much and have already made 4 recipes from it... so I like to think I'd use others if I had them.




















The tofu scramble looks great, it's been ages since I made any & I definitely need to rectify that!
