Food Prep



This week I decided to try doing a food prep day. So on Monday I made the following from scratch: bagels (which were very time consuming but amazing), pasta, pesto, hashbrowns, energy bars and zucchini muffins. I also chopped up a pineapple. It was great because I had less work to do later in the week. Plus this week was weird and I wasn't home a lot so I was glad I did this! Do you do a food prep day?

Deeelicious chocolate cookies. This recipe but I added coconut and some almonds. They were better when frozen!


Soft tacos filled with Trader Joes faux chicken, kale, salsa, olives etc

Chips, salsa, guac and beer. Yeah!

Amazing bagels. Worth all of the work!


I made this pasta (used my Omega juicer pasta attachment!) and this pesto but with almonds. Mmm.

Moussaka recipe from Native Foods Cafe cookbook. I'll get a better picture when I eat the leftovers because it was very runny at first but it did firm up! Really delicious. It's just a layer of potato, tomato sauce, zucchini, tomato sauce, eggplant and topped with a vegan bechamel sauce!

Had Subway yesterday when I was waiting around for my husband. All the veggies minus jalepenos with spicy mustard and avocado.

Whipped up some curry last night. It's my easy go to meal these days.

Breakfast this morning was a simple tofu scramble and hashbrowns. The scramble has some garlic powder, pepper, sea salt, Daiya mozzarella and turmeric.

Overnight Oats


Mostly just dinner pictures this week. I am trying to cut back on the wheat/gluten, slowly but surely, I guess.

Homemade tortilla and sort of these tacos. Tasty but way too much garlic.

Sweet potato burger. I love these.

Sort of like chicken alfredo. I just made a white sauce and blended it with spinach. Then I added Gardein chicken strips, mushrooms and the pasta. It was sooo good.

Whole wheat pizzas. My husband doesn't like Daiya so I only do part with it haha The one on the left is inspired by this recipe but hoooly was it ever salty!

VERY tasty enchiladas. I'll definitely use this recipe again.

Veggie pot pie with whole wheat crust. Similar to this recipe.

Chickpea fillet and veggies. I actually loved these fillets!! I wasn't sure how they'd turn out. I didn't make the sauce because I didn't have veganaise so I just added a bit of vegan ranch. You definitely do want some sort of sauce though because they are a bit dry.

GF...random wrap, just using up leftovers haha

 Overnight oats. I'll share my recipe. I like making this for my husband to bring to work in the morning.

Overnight Oats:
1/4 cup oats (gf if you prefer)
1/2 tbsp chia seeds
1/4 cup non dairy milk (I used homemade almond milk here)
Sprinkle of cinnamon (if you like cinnamon; I love it)
Dash of vanilla
Fruit

Add everything but the fruit and mix it all up and then top it with the fruit. Let it sit in the fridge until the liquid is absorbed. Overnight generally works best ;) For the one above I made it last night around 8pm and ate it around noon today so it's extra thick.

Another Friday


 Not a lot of photos again this week. It's because my husband is hardly home and so I end up eating of leftovers and very simple meals!  He was home part of Sat/Sun though so that was nice! We ate at BJs again so I could have another pumpkin beer hehe It's so delicious!

 BJs. I love the deep dish pizza vegetarian pizza without cheese and extra marinara to dip! Their crust is soo good! The gluten free one is also vegan but I just can't resist their deep dish.
 gf pasta with spinach, mushroom and hummus. So simple.
 This Trader Joes Papaya Mango Salsa is SO good.
Tried something new. Used tofu to do a "fried steak". I've never even had actual fried steak before. I'm not big on fried foods and eat them very very occasionally. It was good but I honestly think I would have enjoyed it even more if I had baked it. I topped it with some spicy bbq sauce.

My featured Vegan MoFo'er this week is... Vegan Eats and Treats!   Cute blog name, I think. I found this blog last year around this time. Vegan Eats and Treats is run by Amey but also sometimes features her husband and adorable pups! Oh and cute drawings. I can't forget the cute drawings.  You won't find a ton of recipes on this blog but I do get a lot of ideas and learn about new ingredients.  Here's just a sample of her MoFo posts.
