Hungry Yet?

This might be the yummiest cornbread I've ever had! Recipe here. It is moist, crumbly but doesn't fall part and just slightly sweet.

 Green smoothie using Trader Joe's Green Plant juice. Sort of a cheaters way to a green smoothie. The juice does have its benefits but can't beat fresh so I added some ingredients. It is super tasty!

Mostly concentrate and powders but it beats more store bought juices.  

These yam soba noodles are SO good. This was a very tasty dish.

A typical week day breakfast for me. Oats with some peanut butter, flaxmeal and fruit.

Flatbread pizza. Just hummus and roasted veggies on flatbread; so tasty and quick.

 Mmm fruit! Tangelos have become a favourite of mine.

 Overnight oats.  The night before; in the morning; after I added some more almond milk and some strawberries. 

 Apple cinnamon pancakes from Peas and Thank You cookbook using whole wheat pastry flour topped with a bit of pure maple syrup and almond yogurt. These pancakes are super filling! The apples add a nice natural sweetness. They are great with nut butter too!

Finally decided on my own "cheese" sauce recipe sans cheese. If you want it to actually taste cheesy, feel free to add some cheese or soy cheese to it! This is just the basic recipe, which is still very tasty and pretty guilt-free. It's also good with the addition of refried beans. It can be used as a dip or sauce (great on veggies!).
Healthier "Cheesy" Dip/Sauce
Mix 1/4 cup flour, 2 tsp cornstarch and 1/4 cup nutritional yeast in a pot
Add 1 cup water and bring the mixture to a boil
Lower to a simmer and stir regularly (a whisk helps)
Add 1/4 cup salsa
Add 1 tsp chili powder
Add salt and pepper to taste
 Done!
