- Before/after the mud run! It was tough but so much fun. I did it last year as well.
- Bumps and bruises from the obstacles haha They added quite a few more this year. I'm feeling it today!

We Eat
Some green food I enjoyed on St Patrick's Day. Recipes here!
I attempted to make hamburger buns. Buggers didn't turn out! This recipe. Still a tasty meal with Wildwood burgers, avocado, tomato and some sauteed mushrooms.
haha This was last Saturday when my husband and I were on our way to a friend's house to watch the UFC fights. We supplied the pizza. I decided to "fit in" with the crowd and get a frozen pizza too. I thought it was kind of funny. The wife at the house we went to said "bless your heart" when I told her which really made me laugh!
I was excited to make these lentil wraps because I love the Trader Joes ones so much. They were yummy! A lot of work for a wrap and I made wayyy too much of the lentil mixture but still. Oh and the dipping sauce did not work out. Also, I did not have lavish bread so they kinda fell apart haha But they were tasty!
Yummmmmm! Obviously we shopped at Trader Joes for a change last weekend, haha.
We went to Native Foods Cafe last weekend and I got the St Patrick's Day special and it was SO GOOD. I think this is my favourite restaurant... If only they normally offered this sandwich! It had pink vegan horseradish sauce, people. (pretty sure I've never even had regular horseradish sauce though haha)
These are super tasty. TJ's has the best snacks.
Picked up some orange chickenless at TJ (Trader Joes, if you didn't catch that) and made a stir fry.
Made some banana muffins but they did not turn out. SUPER dry. I deleted the recipe and can't remember where I found it now.
This, despite how it looks, was very tasty shepherd's pie.
My favourite thing on a warm day is a super thick green smoothie. I've making sure I always have frozen fruit in the freezer so I can whip one up! I think this was almond milk, frozen peaches, frozen banana, flaxmeal and spinach.
We don't normally eat out during the week but we had to run some errands on Wednesday night so we ended up eating at BJ's. The deep dish pizza crust is just to die for. The Hopstorm IPA? Not so much. I LOVE IPA's but I couldn't even drink it. Thankfully, they are super sweet at BJ's (we've never had bad service) and replaced it. So I got the Kona Brewery Koko Brown beer which is amazing. It tastes like caramel. And yes, it's vegan.
I made Cheeze-Its! I actually never liked the real thing but these are delicious! I accidentally added a full tsp of liquid smoke instead of 1/4 hahah but they are still great. Only bummer is they lost their crispiness after a day. I think I could have rolled them flatter though and that would probably help.
Obviously I'm a big fan of curry. I love love this recipe for curry sauce and the tofu was fantastic as well. New favourite for sure. And yes, that is Jasmine rice. I normally stick to brown but a friend gave it to me so...

Fitness Update
First of all, look at all of this food a friend gave me before moving away!! My kitchen has never been so full of food, haha. It's pretty awesome. What isn't awesome is her moving away!
On the go dinner. Splurged on one of these Evolution juices from Starbucks. I think they are over $5! It was tasty though and it says they don't use heat. The spicy lentil wrap was delicious and now I have my eye on this recipe.
Native Foods Cafe nachos! Omg, amazing. I'd seen quite a few people order them and they just looked too good to pass up. My husband loved them too. Corn, salsa, green onions, a bit of "cheesy" sauce, faux beef, black beans, some sort of cashew spread, guacamole etc
Bean dip. I tried out a new brand of vegan cheese called Go Veggie! Have you had it before? Um, it's DELICIOUS. I was quite surprised! You mostly hear about Daiya (which has grown on me) but I actually like this better. It's one of the things my friend gave me when she moved. This is the "Mexican style" one. I don't really remember what real cheese tastes like anymore but to me this tastes the most like it. It also melts well, as you can see. It is similar, nutrition wise, to Daiya but it has more calcium! Their products didn't used to be vegan but they recently came out with some that are.
More green smoothies. I have fresh frozen blueberries, pineapple, banana and mango right now so it's smoothie heaven up in here!
This sweet potato falafel is delicious. I will definitely make it again.
I had both of these green smoothies this week and they were delicious.
I made these "brownies". I use that term loosely because they are really too moist to be like brownies. I think my banana was too big haha I have been enjoying them! I stuck them in the freezer last night so I'm curious to see how they taste that way.
I made this sandwich and oh man, it was tasty! Try it!
I used the Bob's Red Mill gf pizza mix to make this pizza. This is just half of the dough. Uhh, as you can see... I forgot I had to pre-bake this before adding the toppings. haha So I scraped them off, baked it and then continued on. Oops. So I can't really honestly judge the pizza crust since I messed it up! I will try the second half this weekend.
Tried this tea. It was....different. haha I didn't love it but it was alright.
I know I haven't talked about fitness in a while so here's a bit of an update! Well, first of all, I gained weight. Besides over indulging over Christmas, I can't think of any other reason why. I'm trying to not be bothered by it and just focus on being healthy though. If it's supposed to come off, it will. I re-joined the gym yesterday because I just got way too bored with working out at home. My goal is not only to tone up but to really gain some muscle! If you follow my Tumblr then you know sort of what I'm aiming for.
I was running but only once or twice a week but I recently signed up for the Camp Pendleton 10K Mud Run in June so I've started training for that. I did it last year as well. I'm using this training plan and really love it. I run Tues, Thurs, Sat and Sun.
I'll update at the end of the month to talk about what I've been doing, progress etc. :)

A Cheap Margarita
This was the result last Saturday when I went to Trader Joes after having a very large and strong IPA beer to get snacks/drinks to enjoy at home while we watched the Strikeforce fights. haha Some favourites! I love that popcorn and TJ always has yummy the rolls. The tequila and lemonade are really tasty together, sort of like a cheap margarita. Like my skull and cross bones ice cubes? Oh the whiskey was my husbands. I drank whiskey in highschool but rarely have it anymore.
weekly grocery trip. last week's trip was pretty big so we still have a lot now. This weekend I'm mostly picking up stuff for a Lemongrass Spa party I'm having on Monday (more on that soon).
Froze a bunch of fruit for smoothies. It makes the smoothies so thick and delicious.

a very green sandwich. I occasionally indulge in "white bread" for subs and found that Earthgrown Market puts packs of 3 or so on clearance for just 50cents when they are close to expiring!

I know I haven't talked about fitness much lately. I have less than a week left of the Insanity program left so I will talk about that once I'm done. Honestly, I have found it hard to stay motivate during the second month of it. I'm just sort of "over it" and ready to move on but am determined to complete the whole thing!
